What Can You Plant in Late August? Work Backward From Your First Fall Frost

You can still sow a fall vegetable garden in late August, but the useful question is not simply “What grows in my zone?” It is: Which crop has enough time to mature before cold and low light slow it down in my garden?
Start with your local average first fall freeze, check the variety’s days to maturity, and add a two-week fall slowdown buffer. Fast leafy greens and roots may still fit many gardens. Longer crops may require transplants, season protection, or a warmer climate.
Your USDA zone is not your first-frost date
USDA Plant Hardiness Zones are useful for judging whether perennial plants are likely to survive winter cold. The map is based on a location’s average annual extreme minimum winter temperature, not the date of its first fall frost or freeze. USDA also describes the map as a general guide based on 1991–2020 weather data—not a forecast for a particular year (USDA Plant Hardiness Zone Map).
That distinction matters for annual vegetables. Two gardens in the same hardiness zone can have different fall planting windows because elevation, urban heat, wind exposure, and local terrain affect overnight temperatures.
For this job, use frost and freeze climatology from your local National Weather Service office or a nearby weather station. A first freeze is commonly tracked at 32°F, while frost may form at slightly warmer air temperatures under the right conditions. Historical dates are averages, not appointments: the National Weather Service notes that cloud cover, wind, soil moisture, and whether a station is urban or rural can change the actual date (NWS frost/freeze climatology).
Use this fall planting formula
University of Maryland Extension recommends adding a 14-day “short-day factor” because declining light and cooler temperatures make fall crops grow more slowly (Fall Vegetable Gardening and Season Extension).
Use this as a starting calculation:
Latest planting date = target harvest date − days to maturity − 14 days
Work through it in four steps:
- Find the average first 32°F freeze date for a nearby weather station.
- Choose a crop and read the days-to-maturity figure for that exact variety.
- Decide on a target harvest date. A frost-tender crop needs to finish before damaging cold; a cold-tolerant crop may keep growing or holding after a light frost.
- Count backward by the days to maturity, then count back 14 more days for slower fall growth.
Suppose your nearby station’s average first freeze is October 20 and a radish variety lists 30 days to maturity. Using October 20 as the working harvest date, count back 44 days: the planting target is about September 6. That is a planning estimate, not a guarantee. An unusually hot September, early cold snap, dry seedbed, or slower-growing variety can shift the result.
One detail often gets missed: “days to maturity” does not always start at the same point. For crops commonly direct-sown—such as radish, spinach, beets, and leafy greens—it generally runs from sowing to harvest. For crops commonly transplanted—such as broccoli, cabbage, cauliflower, and Brussels sprouts—it generally runs from transplanting to harvest, according to Maryland Extension. Crops that may still fit a late-August window
Your exact variety and location decide the answer, but these Extension ranges are useful for a first pass. Use those ranges as planning examples rather than promises for every seed lot or climate. The days to maturity on the specific variety page or seed packet should take priority.
Short runway: start with quick roots and greens
If your calculation leaves roughly four to six productive weeks, investigate radishes, mustard greens, spinach, or baby leaf lettuce first. They can offer an earlier harvest than a heading cabbage or Brussels sprout crop.

A crop may fit on paper and still establish poorly in hot soil. Longer runway: transplants may be the realistic choice
Broccoli, cabbage, cauliflower, and Brussels sprouts can be excellent fall crops, but late August may be too late to start them from seed in shorter-season regions. A healthy transplant moves you further along the clock; it does not erase the remaining days to maturity.
If your back-planned date has already passed, choose a faster crop instead of assuming the plant will catch up. In long, mild falls, the same longer-season crop may still be practical. That is why a national “plant this in August” list is less useful than doing the date math.

Before sowing, check these five inputs:
- Nearest reliable weather station: A station at a similar elevation and setting is more useful than a distant city average.

- Your garden’s microclimate: Low spots often cool faster, while walls, pavement, and dense urban areas can hold heat.
